  1. Looks absolutely delish, the only gripe i have with this dish is the skins on the chips ….. Totally gives the chips a different taste.

  2. I got to 3 mins before stopping and writing this, myself and my family own a fish and chip-shop and I’m sorry but you can’t say perfect in the same breath when fish and chips are mentioned.
    Cutting fries here you go. Peel potatoes top and tail on, enough so it will stand up without falling. Then with knife cut from top downwards working from right to left thickness 1cm you want slices then cut said slices I cm fries done. Wash and soak in cold water for 1hr to 8hrs removing the starch, starch will give a soggy finish, blanch in boiling water 5 mins. Your looking for a translucent colour and a bend without breaking. Lay on baking sheet place into fridge to get cold. (In the shop we use a product called dry-write that removes this process)
    Fish batter
    1 cup plain flour
    ½ cup rice flour & sweet potato flour
    1 tablespoon baking powder & bicarbonate soda
    2 tablespoon malt vinager
    350ml soda water
    Mix whisk your looking for double cream consistency
    Frying fish pat dry your fish fillets salt pepper fillets, dip your fish into the batter , then place I to the oil laying fish away temp 175 cook for 5 mins turn fish after 2 mins your looking to turn a second time at 4th min mark lay on oven rack place Into hot oven 160 keeping it warm till you fry your fries . Take cold fries out fridge place in hot oil in batches till golden transfer to hot oven tray keeping hot till your ready to plate.

  14. Do you ever make make a batter with just flour, cornmeal or breadcrumbs or cornstarch ???.. why always a wet bstter????.. I love both, I’m just curious as to why you use the same technique all the time
